Can’t adjust video settings

I have Quicktime Version 10.4 and I’m trying to figure out how to adjust the video quality. The screen recordings are too choppy so I’m trying to record at a different rate to see if that make sit any better. Is this even possible? I hit the dropdown menu next to the record button but all I have is mic options.
